Ingredients

  • 600 g ground beef (mixed)
  • 200 g veal patty
  • 1 onion (finely chopped)
  • 1 tbsp butter
  • 100 g cranberries (finely chopped)
  • 1 roll of bread (old-fashioned)
  • 2 Eggs
  • 50 g Västerbotten cheese grated (Swedish cheese similar to Parmesan)
  • semolina breadcrumbs (as needed)
  • 1 tsp Swedish spice blend (with salt, paprika, mild pepper, onion, celery, garlic; Allround Krydda)
  • butterfat (for frying)

Instructions

    Combine the ground beef with the veal patty in a bowl. Sauté the onion in butter until translucent, add the cranberries, cook briefly, set aside to cool. Soak the bread roll in warm water, squeeze out excess liquid and mix it with the cranberry-onion mixture into the meat.

    Add the eggs, cheese, and spice blend. Knead everything into a firm meat dough; if too soft, add more breadcrumbs. With wet hands shape small balls from the dough and fry them in hot butterfat for 5-6 minutes on all sides. Transfer to a baking dish and keep warm at 80 °C in the oven. Serve with lingonberry dip (ready-made) if desired.
