Lamb Koftas

Ingredients
- 2 cloves garlic
- 500 g ground lamb
- 1 tbsp Olive Oil
- 1.5 tsp sweet paprika
- 0.5 tsp hot paprika
- Salt
- Pepper
- 1 onion
- 1 lemon

- 4 cloves garlic
- 500 g yogurt
- 150 g quark
- 1 tsp Olive oil
- Salt
- Pepper
Instructions

Wash, peel, and grate the cucumber on a kitchen grater into a bowl. Squeeze out the cucumber juice. Add the pressed garlic cloves using a garlic press.

Whisk the yogurt with quark and olive oil until creamy. Mix in the cucumber mixture, season with salt and pepper, and refrigerate until serving.

Peel the garlic cloves and mash them into the ground lamb in a bowl. Knead with 1 tbsp olive oil, 1 tbsp water, both types of paprika, salt, and pepper into a smooth dough. With damp hands, shape 12 small rolls about 6 cm long. Peel the onion and cut into large pieces. Slice the lemon into rounds and quarter them. Alternate threading three meat rolls with onion and lemon pieces onto skewers.

Heat a pan. Brush the skewers with a little oil and cook for about 10 minutes on all sides. (Or grill on an oiled griddle, turning frequently)

Serve lamb skewer with cucumber yogurt and optionally grilled tomatoes.
