- 500 g ground beef
- 1 piece ginger (about 2 cm piece)
- 1 Spring onion
- 1 Garlic clove
- 2 Eggs
- 6 tbsp breadcrumbs
- 0.5 tsp chili powder
- 0.5 tsp cumin
- 0.5 tsp ground coriander
- Salt
- pepper (ground)
- 1 onion
- 1 red bell pepper
- 1 yellow bell pepper
- 1 Garlic clove
- 3 tbsp Sesame oil
- 2 tbsp Soy sauce
- 4 tbsp sweet chili sauce
- 1 tbsp Rice vinegar
- 1 tbsp honey
- Salt
- pepper (ground)
Instructions

Preheat the oven to 180°C.

Step 1: Peel and finely chop ginger, one garlic clove. Wash, trim, and finely chop the spring onion.

Step 2: Combine ground beef with eggs, breadcrumbs, spices, chopped spring onions, ginger, and garlic.

Step 3: Season with salt and pepper as desired and shape into small meatballs.

Step 4: Place the meatballs on a baking sheet lined with parchment paper and bake at 180°C for about 15 minutes (check doneness).

Step 5: Wash, trim, halve, deseed, remove white skin from peppers, and slice into thin strips.

Step 6: Peel, halve onions and cut into fine strips. Treat garlic similarly.

Step 7: Heat oil in a pan and add garlic.

Step 8: Briefly sauté peppers and onion in the pan, season with salt, pepper, and soy sauce.

Step 9: Deglaze the vegetables with rice vinegar and broth, then pour sweet chili sauce and honey over them.

Step 10: Spread the vegetables on a preheated plate and arrange the finished meatballs on top. Garnish with fresh coriander if desired.
