Ingredients

  • 1 Shallot
  • 1 Garlic clove
  • 20 g Ginger
  • 1 Green Chili Pepper
  • 2 tbsp soy oil
  • 400 g mixed ground meat
  • 100 ml meat broth
  • 2 Spring Onions
  • 2 lettuce leaves
  • 200 g egg noodles
  • 1 tsp hoisin sauce
  • 1 tbsp soy sauce
  • 1 tbsp dry sherry
  • 1 tbsp freshly chopped coriander

    Peel and finely chop the shallot, garlic, and ginger. Rinse the chili pepper, remove seeds, and slice into thin strips.

    Heat oil in a pan and sauté the shallot, garlic, ginger, and chili until fragrant. Add the ground meat and cook until crumbly. Pour in broth, cover, and bring to a gentle boil until bubbles appear on the surface, then simmer for about 8 minutes. Remove from heat and let steam gently before opening.

    Wash and trim spring onions, slicing into fine rings. Separate outer lettuce leaves, wash, and pat dry.

    Cook egg noodles according to package instructions until al dente.

    Season the meat with hoisin sauce, soy sauce, and sherry. If desired, cut the drained noodles into smaller pieces and mix in with coriander. Distribute onto lettuce leaves and garnish with spring onions before serving.
