Ground Beef Potato Casserole (Shepherd's Pie)

Ingredients
- 300 g corn kernels (canned)
- 800 g potatoes (starchy, boiling type)
- Salt
- 1 onion
- 4 Carrots
- 800 g minced beef
- 4 Tbsp sunflower oil
- pepper (ground)
- 300 ml beef broth
- 150 ml milk
- 50 g butter
- 1 tbsp chopped parsley

Drain the corn in a sieve. Peel, quarter and boil the potatoes in salted water for about 30 minutes. Meanwhile peel and dice the onion and carrots. Brown the minced beef in hot sunflower oil until crumbly and lightly browned; season with salt and pepper.

Add the diced onion and carrots to the meat and sauté. Add the corn. Deglaze with broth, cover and simmer at low heat for about 20 minutes.

Preheat the oven to 180 °C fan. Drain the potatoes and mash them with a potato masher. Warm the milk and mix it into the mash. Stir in butter pieces until melted; season with salt and pepper and fold in parsley. Spread the beef mixture in a baking dish, top with the mashed potatoes and smooth the surface. Bake for about 20 minutes until golden.
