Chicken Fillets in Vegetable Marinade

Ingredients
- 3 chicken breast fillets
- 4 tbsp oil
- Salt
- Pepper
- 200 g carrots
- 80 g celery
- 100 g leeks
- 1 Garlic clove
- 5 tbsp white wine vinegar
- 125 ml Vegetable broth
- 2 tbsp freshly grated horseradish root
- parsley
Instructions

Sear the chicken breast fillets in oil over gentle heat for 15-20 minutes, seasoning with salt and pepper.

Meanwhile peel and finely dice carrots and celery. Halve leeks, rinse thoroughly, and dice them as well. Remove the fillets. Sauté the vegetables in oil for 2 minutes. Add garlic, salt, pepper, and vinegar; pour in broth to deglaze.

Slice the cooked fillets into thin rounds and arrange on a platter. Pour the vegetable marinade over them and sprinkle with horseradish and chopped parsley.
