Ground Beef Vegetable Soup

Ingredients
- 2 onions
- 3 Garlic cloves
- 2 tbsp olive oil
- 600 g ground beef
- 1 tbsp Tomato Paste
- 600 ml Meat broth
- 2 carrots
- 150 g cheddar cheese
- 50 g Emmental cheese
- 2 pickled cucumbers
- 80 ml heavy cream
- Salt
- ground pepper (from the mill)
- Sweet Paprika Powder
- chili powder
- dried dill
Instructions

Peel the onions and garlic. Roughly chop the onions. Add oil to a hot pot, crumble the meat in it and let it brown slightly. Add the onions and press in the garlic. Stir in the tomato paste and cook briefly. Then pour in about 500 ml broth and simmer for about 45 minutes at low heat with the lid half‑closed, adding more liquid as needed.

Meanwhile peel and grate the carrots. Grate the cheddar and Emmental cheeses and mix them together. Dice the pickles into small cubes.

About 15 minutes before the end of cooking add the grated carrots and cucumber cubes to the soup, then stir in half of the cheese during the last ~5 minutes until it melts. Add the cream and season with salt, pepper, paprika and chili.

Serve on soup bowls and sprinkle with the remaining cheese and a touch of dill.
