Ingredients

  • 100 g tarhana flour (Turkish specialty shop)
  • 1 l vegetable broth
  • 1 EL Butter
  • 1 EL paprika paste
  • paprika powder
  • 1 EL dried mint
  • Salt
  • pepper (from grinder)
  • mint for garnish

Instructions

    Stir tarhana flour into cold broth and simmer over low heat while stirring for about 15 minutes.

    Roast paprika paste in hot butter and add to the soup. Season with salt, pepper, paprika powder, and dried mint.

    Serve garnished with fresh mint leaves.
