Ground Beef Glass Noodle Salad with Sprouts

Ingredients

  • 100 g glass noodles
  • 2 Spring Onions
  • 1 small red bell pepper
  • 400 g ground beef (beef)
  • 4 tbsp peanut oil
  • 4 Tbsp sunflower oil
  • 100 g soy sprouts
  • 4 tbsp white wine vinegar
  • 50 ml dark soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp Sambal oelek

Instructions

    Soak the glass noodles in plenty of cold water. Trim and slice the spring onions into rings. Wash the bell pepper, halve it, remove seeds and membranes, and dice finely. Heat sunflower oil in a pan and crumble the ground beef until browned. Add the spring onions and bell pepper, cooking for 3 minutes more.

    Mix vinegar, soy sauce, oyster sauce, fish sauce, and peanut oil; season with salt and pepper, then coat the cooked beef with this mixture.

    Cook the glass noodles in boiling water for 1–2 minutes until al dente, drain, rinse under ice, let drain, and cut slightly with scissors. Toss half of the noodles with the seasoning. Arrange the noodles and seasoned beef on bowls, sprinkle with soy sprouts, and serve.
