Grilled Zucchini with Olives

Ingredients

  • 4 small zucchinis
  • 2 tbsp clarified butter
  • 100 g black olives
  • 3 stalks chives
  • 2 stems basil
  • 3 tbsp olive oil
  • 5 tbsp vinegar
  • 1 tbsp vegetable stock
  • Salt
  • white pepper

Instructions

    Slice the zucchinis diagonally into 1‑cm thick slices. Heat a grill pan or grill and briefly sear both sides in hot clarified butter.

    Drain the olives. Wash the chives and basil, shake dry, and pluck the leaves from the stems. Combine with the remaining ingredients and marinate for at least 45 minutes. Arrange on a platter and serve.
