Cod Potato Gratin

Ingredients

  • 500 g potatoes (mostly waxy)
  • 3 tbsp oil
  • Salt
  • Pepper
  • 125 g mushrooms
  • 4 tbsp butter
  • 500 g Cod fillet
  • tarragon
  • 3 egg yolks (medium)
  • 4 tbsp white wine
  • Dijon mustard
  • 125 g sour cream
  • butter (for the pan)

Instructions

    Peel, wash and slice potatoes thinly. Heat oil in a large non-stick skillet. Fry potatoes for 15-20 minutes, seasoning with salt and pepper.

    Clean, trim and slice mushrooms. Melt 2 tbsp butter. Sauté mushrooms until golden, seasoning with salt and pepper.

    Cut cod into portions, season with salt and pepper. In the same pan, heat remaining butter and briefly sear cod pieces.

    Layer potatoes, mushrooms, and cod in a greased shallow baking dish. Place tarragon sprigs between layers. Whisk egg yolks with white wine, mustard, and sour cream, seasoning with salt and pepper. Pour sauce over ingredients and brown briefly under the preheated grill.
