Ingredients
- 2 kg lean pork rib (already cut into individual pieces, about 3–4 ribs each)
- 3 cloves garlic
- 125 ml olive oil
- 2 tbsp ketchup
- Salt
- black pepper (freshly ground)
- 4 fresh rosemary sprigs

Rinse the ribs with water and pat them dry thoroughly. Press the garlic through a press and mix it with olive oil, ketchup, salt, and pepper to form a marinade. Wash and shake off excess moisture from the rosemary. Toss the spare ribs in the marinade and place the rosemary sprigs on top. Let them marinate for at least 2 hours, preferably overnight.

Grill the ribs for about 30 minutes, turning occasionally and basting with more marinade.

Remove the ribs from the grill, arrange them on plates, and garnish with rosemary sprigs.
