Grilled Seafood
Grilled seafood tastes like a vacation and brings maritime flair to your home. Try this simple recipe from Spoonsparrow!
Ingredients
- 2 cloves garlic
- 2 handfuls parsley
- 2 untreated lemons
- 150 ml olive oil
- Salt
- Pepper (from the grinder)
- 300 g pre-cooked grouper (1 grouper)
- 1 small bay leaf (on a twig)
- 3 sprigs thyme
- 2 large giant prawns (Black Tiger Prawns)
- 8 scallops (pre-cooked and released)
- 1 lobster about 500 g (cooked)
- 1 eggplant
- 1 Zucchini
- 150 g cherry tomatoes
- 1 baby fennel
- 2 bell peppers (yellow and red)
- 2 mild chili peppers

For the seasoning oil, peel the garlic and press it into a bowl. Rinse the parsley, dry it, pluck the leaves and finely chop them. Add to the garlic. Wash the lemons hot and pat them dry. Grate the zest of one lemon and squeeze out its juice. Add both to the garlic and mix with the oil, salt, and pepper.

Rinse the grouper inside and out thoroughly, season the inside with salt and pepper, and fill it with bay leaf and thyme. Rinse the prawns and scallops and pat them dry. Cut the lobster lengthwise in half.

Wash, trim, and slice the vegetables into rounds or strips. Leave the chili peppers whole. Halve the remaining lemon. Brush all prepared ingredients with the oil and grill them together on a hot grill. Grill the fish about 15 minutes, the lobster 10 minutes, the prawns 8 minutes, the scallops 5 minutes, and the vegetables with the lemon 6-8 minutes. Turn everything regularly and brush with oil.

Arrange the grilled seafood on plates and platters, drizzle with remaining oil, and serve.
