Pan‑Roasted Pork Tenderloin

Ingredients

  • 800 g pork tenderloin
  • Salt
  • Pepper
  • 2 tbsp Rapeseed oil
  • 0.5 organic orange

Instructions

    Wash the pork tenderloin, pat dry and remove any sinews. Season with salt and pepper. Heat the oil in a non‑stick pan and carefully place the tenderloin inside.

    Sear the tenderloin on all sides for about 5 minutes until browned.

    Remove the tenderloin and place it on a rack. Finish cooking in a preheated oven at 200 °C (180 °C fan, gas level 3) with a fat pan underneath for about 15–20 minutes.

    Wash the orange hot, pat dry, grate its zest and squeeze out the juice. In the same pan deglaze the browned bits with some orange juice and bring to a boil with the orange zest.

    Finally place the pork tenderloin back in the pan and let it rest in the sauce for 1–2 minutes. Serve the pan‑roasted pork tenderloin hot.
