Ingredients

  • 16 fresh scampi
  • Salt
  • freshly ground pepper
  • 3 tbsp olive oil
  • 3 Garlic cloves
  • 1 sprig fresh rosemary

Instructions

    Remove the shell from the scampi except for the tail. Split each scampi lengthwise, remove the vein, rinse and pat dry on paper towel. Season with salt and pepper. Place the scampi in a heat‑proof dish and drizzle with olive oil. Peel the garlic cloves, mash them, and spread over the scampi. Rinse the rosemary, shake off excess water, and lay it atop the scampi.

    Place the dish in an oven preheated to 180°C (356°F) and bake for about 10 minutes. Serve with toasted bread.
