Ingredients

  • 24 scallops
  • 4 Tbsp lime juice
  • 4 tbsp olive oil
  • 1 tbsp chopped sage
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp sweet paprika
  • 12 slices smoked ham
  • 24 sage leaves
  • 24 multicolored sage leaves
  • 30 g Butter

Instructions

    Wash the scallops and pat them dry. Make a marination with lime juice, olive oil, chopped sage, salt, pepper, and paprika; let the scallops soak for 20 minutes.

    Cut each slice of ham lengthwise and wrap one scallop in a piece of ham. Alternate with sage leaves on wooden skewers and sear in a hot pan with melted butter until golden yellow. Remove and serve.
