Ingredients
- 4 quails
- 1 tsp thyme
- 4 sprigs Rosemary
- 2 Garlic cloves
- 3 tbsp butter
- 2 tbsp red wine
- Salt
- Pepper

Wash the quails, pat dry and cut along the back with poultry scissors. Open them up and gently pound flat.

Finely chop half of the rosemary needles. Peel and press the garlic. Heat the butter and mix in garlic, rosemary, thyme, salt, pepper and red wine.

Brush the quails with this mixture. Grill on a hot grill for about 30 minutes, turning occasionally and brushing with more sauce. Garnish with remaining rosemary.
