Grilled Red Snapper

- 2 Red snapper (ready to cook)
- 2 Lemons
- 1 small stalk of leek
- 1 Onion
- 2 tomatoes
- 1 tsp mustard seeds
- 2 Garlic cloves
- 0.5 bunch thyme
- 2 large banana leaves
- Sea salt

Wash the red snapper thoroughly and rub with a little sea salt. Quarter the lemons and slice into rounds. Clean the leek. Cut the green part into strips and weave them into rectangles. Slice the white part into fine rings. Peel the garlic, finely chop it, and mix under the leek rings. Peel the onion and cut into fine rings.

Wash the tomatoes, quarter them, and also slice into rounds. Add 1/3 of the tomatoes and lemons to the leek rings, mix. Fill the snapper with the leek mixture and place each on a banana leaf. Decoratively arrange some thyme stems and remaining ingredients on the snapper and wrap it in banana leaves for grilling. Grill the wrapped snapper about 10 minutes per side and serve.
