Sturgeon in Banana Leaf

Ingredients

  • 4 banana leaves
  • 2 tbsp olive oil
  • 4 sturgeon fillets (about 180 g)
  • 1 untreated lemon
  • 1 red chili pepper
  • Sea salt

Instructions

    Rinse the leaves, pat dry, and brush with a little oil.

    Rinse the sturgeon, pat dry, and place it in the center of the leaf. Wash the lemon hot and dry, zest it into strips, then squeeze out the juice. Wash the chili, halve, deseed, and slice thinly. Drizzle the juice over the fish, season with salt, and arrange the zest and chili on top. Drizzle with remaining oil and fold the banana leaf to create small packets. Secure with toothpicks. Grill, turning regularly, for 12-15 minutes.
