Redfish cooked in banana leaf

Ingredients
- 1 redfish fillet (ca. 700 g)
- 0.5 bunch coriander (ca. 20g)
- 3 Garlic cloves
- 1 piece ginger (ca. 8 cm long)
- 1 tbsp sambal oelek
- 1 tsp turmeric
- 3 tbsp Soy sauce
- 3 tbsp Rapeseed oil
- Salt
- 2 banana leaves
- 2 limes

Preheat the oven to 200°C with upper and lower heat.

Wash the redfish fillet, pat dry and cut into 8 equal pieces. Wash coriander, shake dry and chop. Peel garlic and half of ginger, finely chop and mix with sambal oelek, coriander, turmeric, soy sauce, rapeseed oil and salt; brush fish all sides and marinate for 1-2 hours. Cut banana leaves into 24x24 cm squares and place one piece of fish on each. Wash limes and slice thinly. Peel remaining ginger and slice similarly. Place two lime slices and two ginger slices over the fish, fold leaf into a packet and secure with a wooden skewer. Bake in preheated oven for 15-20 minutes. Remove and serve open on a plate.
