Ingredients
- 2 red sea bream (or sea bass, ready to cook about 340 g)
- Salt
- Pepper (freshly ground)
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp chopped tarragon leaves
- 2 shallots
- 1 tbsp butter
- 1 Lime

Wash the fish, pat dry and score each side a few times with a sharp knife. Season inside and out with salt and pepper, drizzle with lemon juice, brush the outside with oil, and sprinkle or tuck tarragon into the scores.

Grill on a hot (oiled) grill for about 4-6 minutes per side.

Meanwhile peel the shallots, slice into rings, and sauté in hot butter until lightly browned.

Plate the finished fish on the shallot rings and add lime slices or wedges.
