Ingredients

  • 4 pieces sea bass fillet (about 150 g)
  • 2 tbsp lemon juice
  • Salt
  • Pepper (freshly ground)
  • 3 stalks leeks
  • 400 g cherry tomatoes
  • 200 ml fish stock
  • 50 ml dry white wine
  • 2 tbsp olive oil

Instructions

    Preheat the oven to 200°C (fan). Wash and pat dry the fillets, drizzle with lemon juice, and season with salt and pepper. Clean the leeks, cut the white and light green parts into rings, and wash the tomatoes.

    Place the leeks and tomatoes in a baking dish, pour over the fish stock and wine, season again, then lay the fillets on top. Drizzle with olive oil, cover with foil, and bake for about 20 minutes. Remove and serve.
