Ingredients

  • 1 whole rabbit (about 1.8 kg)
  • 1 untreated lemon
  • 2 sprigs Rosemary
  • 4 tbsp olive oil
  • Salt
  • ground pepper
  • 1 Spring onion

Instructions

    Rinse the rabbit, pat dry, and cut into 8-10 pieces.

    Wash the lemon hot, dry rub it, zest it, squeeze the juice, and combine with the zest in a bowl. Rinse the rosemary, shake dry, pluck leaves, and add to the oil and lemon mixture. Toss the rabbit pieces in the mixture and cover; refrigerate for at least 2 hours.

    Remove the pieces from the oil, strip off herbs and lemon, season with salt and pepper, and grill on a hot grill with the lid closed (best indirect heat) for about 20 minutes, turning occasionally.

    Wash the spring onion, trim, cut into slanted rings, add to the marinades, and distribute over the rabbit during the last 5 minutes of grilling.
