Ingredients

  • 0.5 cube fresh yeast (21 g)
  • 400 g flour
  • 0.5 tsp Salt
  • 2 tbsp olive oil
  • flour (for work surface)
  • 140 g freshly grated Parmesan
  • 500 g cooked chicken breast fillet (skinless)
  • 2 salad hearts
  • 1 Garlic clove
  • 2 egg yolks
  • 1 tsp medium-hot mustard
  • 200 ml olive oil
  • 1 splash lime juice
  • 20 g freshly grated Parmesan

Instructions

    Dissolve the yeast in 200 ml lukewarm water. Mix the flour with salt in a bowl, create a well in the center, pour in the yeast mixture and oil, and knead by hand into a smooth dough. Add more flour or lukewarm water if needed. Knead vigorously on a floured surface for about 10 minutes, cover, and let rest in a warm, draft-free spot for 1 hour.

    Preheat the oven to 240°C (464°F) with upper and lower heat.

    Wash, rinse, dry, and trim the salad hearts.

    Knead the dough again, divide into four equal portions, roll each into thin flatbreads. Place on parchment paper-lined baking sheet, sprinkle half of the Parmesan over them, and bake for 10-15 minutes.

    For the dressing, peel and crush the garlic, then blend with egg yolk and mustard in a blender. Slowly drizzle in olive oil while blending until homogeneous. Mix in freshly grated Parmesan and season with salt, pepper, and lime juice.

    Slice the cooked chicken breast into thin strips.

    Remove the flatbreads from the oven, top with chicken strips and salad, drizzle dressing, and sprinkle remaining cheese before serving.
