Grilled Mushroom & Vegetable Skewers

These grilled mushroom and vegetable skewers are easy to prepare and taste great for dinner, lunch, or as a perfect take‑away option.

Ingredients

  • 1 yellow bell pepper
  • 1 red bell pepper
  • 2 Zucchini
  • 3 small white onions
  • 150 g small mushrooms
  • 1.5 Tbsp dried herbs de Provence
  • 4 tbsp olive oil
  • Salt
  • Pepper (freshly ground)
  • fresh herbs (e.g., oregano, rosemary, thyme)

Instructions

    Wash the peppers, halve them, remove seeds and cut into bite‑sized pieces. Peel and quarter the onions. Wash the zucchini and slice into 1 cm thick rounds. Clean the mushrooms and quarter them. Make a marinade with oil, pepper, salt, and herbs.

    Thread the vegetables onto long wooden skewers and brush with the marinade. Place on a hot charcoal grill and cook, turning from all sides until charred and tender. Remove, adjust seasoning if needed, and serve immediately with fresh herbs.
