Ingredients

  • 8 mackerel fillets (with skin about 100 g)
  • 1 Lime (juice)
  • olive oil
  • 1 orange
  • 2 Spring Onions
  • 1 tsp Honey
  • 1 tbsp freshly chopped coriander leaves
  • lime zest (for garnish)

Instructions

    Rinse the fish fillets and pat them dry. Drizzle with lime juice and season with salt and pepper. Brush with olive oil and place skin-side down on the grill. Grill for about 5 minutes until golden brown, flip and grill for another 3-4 minutes until cooked through.

    Peel the orange thoroughly, segment it and catch the juice. Squeeze out the remaining flesh and mix with honey. Wash and trim the spring onions, cut them diagonally into rings. Add to the fillets along with coriander leaves and orange juice.

    Place the mackerel fillets on a plate, spread the orange sauce over them and garnish with lime wedges before serving.
