Ingredients

  • 2 cooked lobsters (about 500 g each)
  • 1 untreated lime
  • 2 passion fruits
  • Olive oil (for greasing grill rack)
  • 2 tbsp olive oil
  • 3 tbsp white rum
  • 100 g cold butter
  • 2 ripe avocados
  • Sea salt
  • pepper (ground)

Instructions

    Detach the lobster claws and split the tail in half lengthwise. Wash the lime hot, dry it, peel the zest with a vegetable peeler and cut into thin strips. Halve the passion fruits and scoop out the pulp.

    Place the lobster tails on a greased grill rack with the zest facing outward. Add the claws and cook both for 6-8 minutes over high heat.

    Heat olive oil in a pan and briefly sauté the lime zest. Deglaze with rum, add the passionfruit pulp, let simmer slightly, then gradually stir in cold butter. Halve the avocados, remove the pit, scoop out the flesh and slice thinly. Drizzle with lime juice. Remove lobster from grill, extract meat, arrange on plates with avocado slices, sprinkle sea salt and pepper, drizzle passionfruit sauce over it, and garnish with watercress if desired.
