Pork Tenderloin Wrapped in Ham

Ingredients
- 1 Shallot
- 1 Garlic clove
- 1 handful basil
- 2 tbsp soft butter
- 20 g breadcrumbs
- Salt
- Pepper
- 1 pork tenderloin (ca. 750 g)
- 3 tbsp vegetable oil
- 125 ml meat broth
- 150 g Parma ham
- basil (for garnish)

Preheat the oven to 160°C fan and top heat.

Peel and finely dice the shallot and garlic. Rinse the basil, remove leaves and finely chop. Mix the diced shallot, garlic, basil, butter and breadcrumbs; season with salt and pepper.

Wash the pork tenderloin, pat dry, trim and season with salt and pepper. Heat oil in a roasting pan and sear the tenderloin on all sides. Remove and set aside. Deglaze the pan with broth and reduce for 5 minutes.

Lay ham slices lengthwise beside the tenderloin and spread basil paste over them. Place the tenderloin on top, roll it up. Put the rolled tenderloin in the pan with ham ends down and bake for about 30 minutes. Remove and garnish with basil as desired.
