Grilled Herring on Vegetables

Ingredients

  • 600 g yellow beans
  • Salt
  • 1 Lime
  • 400 g broccoli florets
  • 1 stalk leek
  • 4 tbsp olive oil
  • 100 ml vegetable stock
  • white pepper
  • 4 herring fillets (pre‑cooked)

Instructions

    Wash and trim the beans, then cook in salted water for 10–12 minutes until al dente.

    Meanwhile squeeze half a lime. Wash broccoli florets. Clean and slice leek into rings. Heat 2 tbsp oil in a pan and brown the leeks golden. Add broccoli, pour in vegetable stock, cover and simmer for about 5 minutes. Then add beans and season with salt, lime juice and pepper.

    Rinse herring under cold water, pat dry, season with salt and pepper, brush with remaining oil. Grill on a hot grill for 4–5 minutes per side over medium heat.

    Meanwhile wash the remaining lime, pat dry and quarter it.

    Arrange the vegetables on a plate, place the herring on top and garnish with lime wedges.
