Fried Glass Noodles

Ingredients

  • 500 g Chinese cabbage (1 head)
  • 4 Carrots
  • 1 red chili pepper
  • 1 Garlic clove
  • 200 g bean sprouts
  • 200 g fresh pineapple chunks
  • 1 tbsp peanut oil
  • 5 tbsp sweet and sour sauce (pre-made)
  • 4 tbsp soy sauce
  • 2 tsp cornstarch
  • peanut oil or specialty oil for frying
  • 100 g fine glass noodles
  • chopped scallions

Instructions

    Clean the Chinese cabbage and cut into thin strips. Peel carrots and cut into thin sticks. Deseed the chili pepper and slice into rings. Peel garlic and finely chop. Rinse and drain the prepared ingredients and bean sprouts. Cut pineapple into small pieces.

    Heat oil in a wok or large pan. Sauté the garlic. Add the vegetables and chili, stir-frying for about 3 minutes. Add pineapple. Season with sweet and sour sauce. Whisk soy sauce with cornstarch, then pour into the vegetables. Bring to a quick boil and simmer for about 1 minute.

    Heat frying oil in a pot. Break noodles into pieces and fry in batches in very hot oil until crisp. Remove with a slotted spoon and drain on paper towels.

    Arrange fried glass noodles and vegetables on plates. Garnish with chopped scallions.
