Grilled Green Vegetables in Foil

Ingredients
- 300 g broccoli
- 2 Zucchini
- 300 g green asparagus
- 300 g Sugar snap peas
- 1 bunch spring onions
- 6 shallots
- 1 tbsp green pickled peppercorns
- 2 bunch arugula
- Salt
- Pepper
- 2 Garlic cloves
- 8 tbsp olive oil

Clean and wash the broccoli, cut into florets and trim thick stems. Wash the sugar snap peas and pinch off ends. Clean and wash spring onions, trim ends, and cut into large pieces. Trim asparagus ends. Peel and halve shallots.

Wash zucchini, trim ends, and slice into thick rounds. Blanch broccoli, sugar snap peas, and asparagus in boiling salted water for 3 minutes each, then immediately shock in ice water and drain well. Cut four large pieces of sturdy aluminum foil, mix the vegetables, and divide into four portions.

Wash arugula and sprinkle over the vegetables with peppercorns. Whisk olive oil with salt, pepper, and pressed garlic, then drizzle over the vegetables. Seal the packages tightly, place on a hot grill, and cook for 10 minutes, serving directly from the foil.
