Ingredients
- 1 kg green asparagus
- Salt
- 3 organic lemons
- 4 tbsp olive oil
- Pepper
- 1 tbsp honey

Wash the asparagus, peel the lower third, cut off the woody ends. Blanch in boiling salted water for 5 minutes, then drain and shock with cold water to stop cooking. Let it dry well.

For the vinaigrette rinse lemons hot and pat dry. Slice two lemons thinly and squeeze out the juice of the remaining ones. Mix lemon juice with oil. Season with salt, pepper, and honey; taste and adjust.

Grill the asparagus over a hot grill, turning occasionally, for 3–5 minutes. Arrange on a platter with the lemon slices and drizzle with the vinaigrette before serving.
