- 20 stalks of white asparagus
- Salt
- 2 tbsp sugar
- 30 g Butter
- 4 slices of alpine cheese (thick-cut)
- lettuce leaves (for garnish)

Peel the asparagus and trim the ends so all stalks are the same length. Cook in boiling salted water with sugar and butter for about 10 minutes. Remove from the cooking liquid, drain, and arrange on a baking sheet lined with parchment paper. Preheat the oven grill.

Place the cheese slices over the asparagus portions, leaving the tops of the asparagus exposed. Broil under the oven grill until the cheese is golden brown. Transfer to plates and garnish with lettuce leaves.
