Ingredients

  • 1 bunch asparagus
  • 1 tbsp butter
  • 1 tbsp sugar
  • 100 g crème fraîche
  • 1 tsp lemon juice
  • 2 tbsp watercress
  • Salt
  • Pepper
  • 1 Avocado
  • 1 tbsp Crème fraîche
  • 1 tsp grape seed oil
  • 1 tbsp Lemon Juice
  • Salt
  • Cayenne pepper
  • 2 tbsp chopped pistachios
  • 2 Tomatoes
  • 2 tbsp olive oil
  • 1 shallot, finely chopped
  • 1 garlic clove, finely chopped
  • 2 tbsp red wine
  • 1 tsp sugar
  • Salt
  • Pepper

Instructions

    Peel the asparagus and place in boiling salted water with sugar and butter. Cover and let sit for 20 minutes.

    Remove and serve with the three sauces.

    Whisk sour cream with lemon juice, season with salt and pepper, pour into a small bowl and decorate with watercress.

    Peel the avocado, remove the pit and mash with a fork. Stir in crème fraîche, grape seed oil and 1 tbsp pistachios. Season with salt, cayenne pepper and lemon juice. Pour into a small bowl and garnish with 1 tbsp pistachios.

    Wash the tomatoes and dice them finely.

    Sauté the shallot cubes with garlic in hot olive oil, add sugar, red wine and tomatoes. Simmer until thickened. Season with salt and pepper.
