- 2 kg green asparagus
- 1 tsp salt
- 1 tsp butter
- a pinch of sugar
- 200 g butter
- 4 tbsp hazelnut flakes
- Salt
- white pepper
- 4 tbsp fresh Parmesan

Peel the lower third of the asparagus and trim the ends.

Bring water with salt, butter, and sugar to a boil; add the asparagus and cook for about 10 minutes.

Melt butter over medium heat, bring to a simmer, and skim off the white foam with a spoon. Toast the hazelnut flakes in the melted butter, season with salt and pepper. Pour the butter over the asparagus, sprinkle Parmesan on top, and serve on a preheated plate or individual dishes.
