- 1000 g green asparagus
- 6 EL olive oil (extra virgin)
- 80 g pine nuts (roasted)
- 3 EL white balsamic vinegar

- Pepper (freshly ground)

Peel the ends of the asparagus, optionally trim the woody part, and cook in lightly salted water for about 3 minutes. Preheat a charcoal or electric grill. Shock the asparagus in cold water, pat dry, brush each spear with olive oil, place on the grill grate, and grill for 3-5 minutes, turning frequently.

Whisk together 6 EL olive oil, balsamic vinegar, salt, and pepper to make a vinaigrette. Arrange the cooked asparagus on a platter, drizzle with the vinaigrette, sprinkle with pine nuts, and cover generously with Parmesan shavings before serving immediately. Serve with toasted white bread.
