Beetroot Salad

A fresh beetroot salad featuring yellow and red beetroot, onion, and a bright citrus dressing. Enjoy this healthy dish from Spoonsparrow!
Ingredients
- 500 g yellow beetroot
- 500 g red beetroot
- 1 Red Onion
- 4 tbsp rapeseed oil
- 2 tbsp Orange juice
- 2 tbsp Apple cider vinegar
- 1 tsp Honey
- Salt
- Pepper
- ground cumin
- 2 tbsp freshly chopped parsley
Instructions

Wash the red and yellow beetroot and steam for 45-50 minutes until tender. Peel the onion and slice into strips.

Whisk together the oil, orange juice, vinegar, honey, salt, pepper, and cumin to make the dressing; taste and adjust seasoning. Divide the dressing between two bowls. Let the beetroot cool slightly, peel, and dice. Fold each beetroot portion into its bowl of dressing and allow to cool to lukewarm or room temperature.

Before serving combine both salads with onion and parsley, season again if needed, and serve.
