Ingredients
- 150 g mixed salad greens (e.g., purslane, lettuce, batavia, radicchio...)
- 1 onion
- 150 g Parma ham (thinly sliced)
- 1 tsp medium-hot mustard
- 3 tbsp white wine vinegar
- 2 tbsp vegetable broth
- 1 tsp Honey
- 4 tbsp olive oil
- Salt
- Pepper
- 50 g Parmesan cheese (chunks)
- 1 small handful dandelion flower buds (for garnish)

Wash the salads thoroughly, rinse, shake dry and tear into bite-sized pieces. Peel the onion and cut into fine strips or cubes. Slice the ham into 3-5 cm wide strips.

Combine mustard with vinegar, broth, honey, and olive oil in a bowl and mix well; season with salt and pepper.

Toss the salad with onions and divide into four bowls. Add the ham between the greens and drizzle with the dressing. Grate Parmesan over the top and sprinkle with dandelion buds before serving.
