Grilled Flounder

Ingredients
- 2 tsp fennel seeds
- 2 tsp coriander seeds
- 1 tsp cumin
- Cayenne pepper
- 2 tbsp olive oil
- 2 tbsp lemon juice
- Salt
- 2 flatfish (flounder, butt... about 500 g, ready to cook)
- lemon wedges
Instructions

Crush 1 tsp of fennel, coriander and cumin in a mortar. Mix with remaining fennel, cayenne pepper and ½ tsp salt.

Rinse fish cold, pat dry with kitchen paper and make 3-4 shallow cuts across the top toward the bones. Drizzle with lemon juice, brush with oil, sprinkle seasoning mixture and press lightly.

Grill on a not-too-hot grill about 4-5 minutes per side until cooked through and easily separates from bones. Serve immediately with lemon wedges.
