Ingredients

  • 4 salmon fillets (about 140 g)
  • 2 tbsp honey
  • 3 tbsp olive oil
  • Sea salt
  • Cayenne pepper
  • 1 red grapefruit
  • 1 Shallot
  • 1 tbsp honey
  • 150 ml grapefruit juice
  • 0.5 tsp cornstarch
  • 1 tsp green peppercorns
  • lemon slice
  • lemon basil

Instructions

    Wash and pat the salmon dry. Whisk honey with 2 tbsp olive oil, season with salt and cayenne pepper, and brush over the salmon. Wrap in parchment paper and steam over hot water vapor for about 10 minutes.

    For the sauce, peel and roughly cube the grapefruit. Peel and finely dice the shallot, sauté in remaining oil until translucent. Add grapefruit pieces and honey, deglaze with juice, bring to a boil, thicken with cornstarch mixed in a little water, remove from heat, puree, and strain through a sieve. Stir in peppercorns, let cool, then season with salt.

    Unwrap the salmon, allow it to cool slightly, then plate warm with sauce. Garnish with lemon slices and lemon basil before serving.
