Grilled Flatbread with Lamb Patties

- 1 Garlic clove
- 3 tbsp olive oil
- 400 g ground lamb
- 1 egg yolk
- Salt
- Pepper (freshly ground)

- 1 flatbread
- pul biber

For the hummus, rinse chickpeas in a sieve under cold water. Puree with an immersion blender until smooth. Peel and finely mince garlic, then grate it with a little salt. Add to the chickpeas along with tahini, lemon juice, cumin, and oil; stir into a creamy consistency, adding a splash of cold water if needed. Season with salt.

Wash, trim, and slice celery thinly. Peel and cut onion into strips. Wash, trim, cucumber, halve lengthwise, and slice. Rinse parsley, shake dry, pluck leaves, and roughly chop. Combine all salad ingredients with oil and lemon juice; season with salt and pepper.

Peel onion and garlic, finely dice both, and sauté in a hot pan with 1 tbsp oil until translucent. Transfer to a bowl and cool. Mix in ground lamb, egg yolk, salt, pepper, and cumin. Add breadcrumbs if desired. Shape the mixture into four patties. Brush with oil and grill each side for about 6 minutes on a hot grill.

Quarter the flatbread, drizzle with oil, and grill both sides until browned. Plate the bread, place the lamb patties atop it with hummus, and garnish with salad. Sprinkle pul biber before serving.
