Grilled Eggplant with Cheese

- 3 eggplants
- 1 Pomegranate
- 100 g sheep cheese
- parsley sprig
- mint sprig
- olive oil
- Salt
- freshly ground pepper
- juice of 2 lemons
- 1 Garlic clove

Wash the eggplants and cut into about 1.5 cm thick slices. Salt them and let sit for about 15 minutes. Cool, pat dry with paper towels. Brush both sides with olive oil and season with salt and pepper. Grill under a hot oven grill from both sides until golden brown.

Peel the pomegranate and carefully remove the seeds.

Peel the garlic. Mix 5 tbsp olive oil with lemon juice. Press the garlic into the mixture and stir. Drizzle the eggplant slices with this sauce and mix well. Let sit for 2-3 minutes. Tear fresh parsley and mint leaves, add to the eggplant slices, season with salt and pepper. Arrange the salad on a plate, sprinkle with pomegranate seeds and crumbled sheep cheese before serving.
