Artichoke, Green Onion and Cherry Tomato Salad

Ingredients

  • 6 small artichokes
  • olive oil
  • Sea salt
  • Pepper (freshly ground)
  • 1 lemon (juice)
  • 2 Garlic cloves
  • 500 g spring onions
  • 200 g Cherry tomatoes
  • 1 pinch sugar
  • 50 g black olives
  • 50 g capers
  • 1 head lettuce
  • 1 tsp fresh oregano
  • 4 tbsp white balsamic vinegar

Instructions

    Clean and wash the artichokes, remove outer tough leaves, trim stems, peel, and quarter whole artichokes (remove any remaining choke if size allows). Drizzle quarters with lemon juice. Smash unpeeled garlic cloves with palm until slightly cracked.

    Heat 6 tbsp olive oil in a large saucepan. Add artichoke quarters to the hot oil. Add garlic, salt, and generously sprinkle coarse ground pepper. Deglaze with about 125 ml water. Cover and simmer over medium heat for 10–15 minutes.

    Wash, trim, and halve spring onions. Add them to the pot during the last 5 minutes of cooking. Let the mixture cool slightly at room temperature, then remove from the liquid.

    Halve tomatoes and melt in 2 tbsp hot oil. Season with a pinch of sugar and salt. Wash, trim, and roughly tear lettuce leaves.

    Combine artichokes with spring onions, tomatoes, olives, capers, oregano, and lettuce; arrange on plates. Drizzle with balsamic vinegar and a touch of olive oil. Season with fresh pepper and a little salt before serving.
