Ingredients

  • 4 chicken breast fillets
  • 2 tbsp honey
  • 0.5 tsp chopped rosemary
  • 1 tsp curry powder
  • Salt
  • Pepper
  • 1 tsp light soy sauce
  • 1 tbsp Lemon Juice
  • 1 lemon
  • 100 g thick white beans (canned)
  • 250 g date tomatoes
  • 50 g black pitted olives
  • 100 g Arugula
  • 100 g feta cheese
  • 4 tbsp olive oil
  • Salt
  • Pepper
  • lemon wedges for garnish

Instructions

    Cut each chicken breast lengthwise into 3 slices. Mix all marinating ingredients together and marinate the chicken slices for 1 hour. Thread onto wooden skewers and grill over high heat for 3-5 minutes per side.

    Squeeze lemons for the salad and pour juice into a bowl. Add drained beans. Wash and quarter date tomatoes. Halve olives, wash arugula, rinse and pat dry. Dice feta into small cubes. Combine all with lemon juice and mix with oil, salt, and pepper. Arrange skewers on plates and garnish each with a lemon wedge; serve immediately.
