Spicy Puff Pastry Cake with Feta and Spinach

- 400 g fresh spinach
- Salt
- 1 onion
- 1 Garlic clove
- 200 g feta
- 1 tsp freshly chopped rosemary
- 2 Eggs
- pepper (ground)
- nutmeg (freshly grated)','100 g butter','1 egg','100 ml milk','300 g filo pastry (refrigerated)

Preheat the oven to 200°C with upper and lower heat.

Wash, rinse, trim the spinach and collapse it in boiling salted water. Drain, shock in cold water, squeeze out excess liquid and chop.

Crush the feta. Peel and finely chop the onion and garlic, then sauté them in a hot pan with oil until translucent. Remove from heat, let cool, then mix with the feta, rosemary, eggs, spinach, salt, pepper, and nutmeg.

Melt the butter without browning it. Whisk the egg with milk, then pour the warm fat into the mixture and stir well.

Grease four round molds. Brush half of the pastry sheets with the egg mixture, layer them, cut out four circles (about 12 cm diameter), line the molds, and spread the spinach filling on top. Brush the remaining pastry sheets with the egg mixture, layer, cut out four circles (8 cm diameter) and place them over the filling. Press the edges firmly together and bake in the preheated oven for about 35 minutes until golden brown. Carefully remove from the mold and serve.
