Ingredients

  • 600 g Spinach
  • 100 g parsley
  • Salt
  • 1 onion
  • 1 Garlic clove
  • 400 g feta
  • Pepper (freshly ground)
  • nutmeg
  • 100 g butter
  • 1 egg
  • 100 ml milk
  • 400 g filo dough

Instructions

  1. 1.

Rinse the spinach and parsley, shake dry and trim. Blanch together in salted water briefly, shock in ice water and drain. Peel and finely dice the onion and garlic. Combine with the spinach in a bowl. Crumble the feta on top, mix well and season with salt, pepper and nutmeg.

  2. 2.

Preheat the oven to 200°C (400°F) with upper and lower heat.

  3. 3.

Melt the butter. Whisk the egg with the milk, then stir in the melted butter.

  4. 4.

Spread the mixture over the filo sheets in overlapping layers about two sheets thick. Brush each sheet with the mixture. Distribute the spinach on top and cover with more filo sheets in several layers. Repeat brushing all remaining sheets with the leftover mixture. If any dough edges stick out, fold them in. Bake in the oven for about 40 minutes until golden brown. Remove the Greek Spinach Pie from the oven, cut into portions with a sharp knife and serve.
