Ingredients

  • 600 g halloumi
  • olive oil
  • Salt
  • pepper (from grinder)
  • 4 meat tomatoes
  • 50 g Pine nuts
  • basil (for garnish)

Instructions

    Preheat the oven to grill mode. Line a baking tray with parchment paper.

    Slice the cheese into 12 pieces. Brush with oil, season with salt and pepper, place on the tray, and grill for 3-4 minutes until golden brown, turning once.

    Wash the tomatoes, cut off the stem ends, and slice them. Place one tomato slice on each cheese piece, season with salt and pepper, drizzle with oil. Sprinkle pine nuts over the top and grill for 1-2 minutes to lightly brown. Serve garnished with basil.
