Ingredients

  • 750 g starchy potatoes
  • Salt
  • 150 g mayonnaise
  • 2 tbsp freshly chopped mint
  • a splash of lemon juice
  • 2 egg yolks
  • 30 g Butter
  • 1 tsp sharp mustard
  • 200 g Salmon fillet
  • 60 g grated Parmesan
  • 2 tbsp freshly chopped lemon balm
  • Pepper
  • nutmeg
  • flour (as needed)
  • 4 tbsp flour
  • 1 egg
  • 80 g breadcrumbs
  • vegetable oil (for frying)

Instructions

    Peel, wash and boil the potatoes in salted water for about 30 minutes.

    Whisk mayonnaise with mint and season with lemon juice.

    Drain the cooked potatoes, press through a potato masher into a bowl and let them steam dry. Mix in egg yolks, butter, and mustard. Rinse salmon, pat dry, finely chop, and combine with parmesan and lemon balm. Season with salt, pepper, and nutmeg. If mixture is too soft, fold in more flour. Shape about 1 tbsp portions into small elongated balls using floured hands. Dredge in flour, dip in beaten egg, then coat with breadcrumbs.

    When all balls are formed and coated, fry in hot oil for 4-5 minutes until golden brown. Drain on paper towels and serve with mayonnaise.
