Ingredients
- 800 g starchy potatoes
- Salt
- 2 egg yolks
- 2 tbsp freshly grated Parmesan
- 2 tbsp butter
- 1 tbsp wheat flour type 1050
- Pepper
- nutmeg
- Vegetable oil for frying
- 100 g whole grain breadcrumbs

Peel the potatoes and cook them in salted water for about 30 minutes. Drain, press through a potato masher, and let steam off. Mix with egg yolks, parmesan, and butter into a well-formed dough. Add a little flour if needed until the dough no longer sticks. Season with salt, pepper, and nutmeg.

Heat frying fat to 170°C. Portion the dough (e.g., with an ice cream scoop) and shape into balls. Coat the balls in breadcrumbs placed in a deep dish. Fry portions for 3–4 minutes until golden brown and drain on kitchen paper.
