Grilled Black Cod Skewers

Ingredients
- 600 g black cod fillet
- 1 Lime (juice)
- 1 handful mint leaves
- 0.5 fresh pineapple
- 2 tbsp olive oil
- Salt
- freshly ground pepper

Rinse the black cod fillets, pat dry and cut into bite‑sized cubes. Drizzle with lime juice. Wash the mint, shake off excess water and pluck the leaves. Toss the mint with the cod cubes. Cover and refrigerate for 30 minutes to marinate.

Peel the pineapple and cut into pieces. Thread the black cod and pineapple onto skewers and brush with olive oil. Grill over high heat for 4 minutes on each side. Season with salt and pepper before serving.
